Baijiu began pushing more aggressively into the US market in 2019 and has found favor with some bartenders looking for a funky and unique bold taste to use in cocktails.
It is a 90 Proof clear grain spirit derived from red sorghum and is pronounced bye-j'yo, meaning "white spirits" in Mandarin.
This Baijiu is praised for its fruit, anise, melon and green apple flavor notes. It is distilled at Luzhou Laojiao distillery, China.
